Scientists have already named the area that includes the bulls-eye. It's called Timanfaya, named after the Spanish national park in Lanzarote, one of the Canary Islands.

I was trying to find the map which shows clearly the various place names NASA have used with the curiosity rover, but I can't seem the locate the one I saw before. They name locations in families and change when they go from one region to another as the rover trundles along. I expect they're doing the same thing with Perseverance, so the first few locations it visits will be named after things in the Canary Islands.

What's the deal with the bit that slowed it down for landing & then flew away. Is that done or is it the bit they're gonna use to get samples up the part in orbit for return to Earth?

The "Sky Crane" is finished, a later mission will visit to drop a collector and then return to Mars orbit and then a later mission will transfer the samples from Mars orbit to Earth.
