I've got a minoSharp water sharpener (it's Japanese).

It's most excellent. It's pull through -with rollers.

(I stopped bothering with the wet-stone when I got one).

I had that exact one when I used to have Global knives - worked very well for me too. The Global block was eventually found moldy in the cupboard.

I can get a discount on Minosharp too

Want and get are two very different things

Even with a discount off the £120 'cooking' version (arf ), I think it's beyond what I can justify.

Why 'water'?

You put water in the well so the rotating stones (coarse and fine) stay wet.

For smaller knives I take the plastic cover/guide off. I can do 12 knives in about 15 minutes.

If I ever broke it, I'd buy another.

I have one too. OK for a quick sharpen, but never gets a knife super sharp. That is a job for the oilstone, followed by a diamond hone.

How on earth do you break one?

I suppose if you were ham fisted taking the wheels out you could break the clips or you could dash it to the ground on a stone floor. I'm more likely to wear the wheels out!

I have a Faithfull double sided diamond hone, in a holder thing, think they call that a docking station.

400 grit one side and 1000 the other. I do plane blades, knives, touch up router bits and even use it as a very fine file sometimes.

I also have a Japanese waterstone that fits into the docking station holder thing but by and large I can't be fucked with waterstones cos they're a faff for a tiny gain.
A strop on a bit of wood can be handy for knives.
Just a few seconds on the diamond hone does a kitchen knife.

It's not an NI, but the UK's best selling Global knife is the 20cm G-2.

I've got a Global Ukon 8" knife which I kinda intended to be the first of several - but I've never found need for anything other than said Global so far

Deffo done that to at least one! Also killed my marble rolling pin the same way.

I think I managed to break split the wheel in half on another, don't think I was even pushing very hard.

Even though I work for the sole UK Global distributer, I don't have any. All my knives are 'Thomas' ones that I got from Tesco's using vouchers about 15 years ago.

Thanks, I'm pretty clueless about what knife for what purpose but given the price (even if discounted) I'd like it to cover the widest range possible. I'll check out the 20cm G-2.

I've had my Global knives for over 25 years now and despite despairing of the abuse they get from the good lady, they still hold up really well. I've been looking at getting some more at some point.
